A Freezer Trick That Turns Vegetable Scraps Into Soup

Those vegetable ends and odd leftover bits that usually go straight into the trash can actually become the start of a great pot of soup, with almost no extra effort.

Keep a Vegetables Box in the Freezer

A container or freezer bag kept in the freezer is the perfect home for onion ends, carrot peels, celery tops, and other vegetable scraps that would otherwise be tossed.

Turn the Scraps Into Soup

Once the container is full, the frozen scraps can go straight into a pot with water and seasonings to simmer into a flavorful vegetable stock or soup base.

Make It Your Own

Adding a handful of rice, pasta, or leftover cooked meat turns the simple stock into a more filling meal, and it's easy to vary the flavor with whatever herbs and spices are on hand.
